Butter Chicken With Tasty Grains.
A delicious and comforting way to use up leftovers and perfect to serve with our Indian-inspired Tasty Grains.
Method
Put the butter in a large deep sided frying pan or skillet over a medium heat. Add the cumin seeds and cook for 30 seconds until fragrant. Add the onion and cook for 6 minutes, stirring occasionally, until lightly golden. Add the garlic, ginger, chilli powder, and half the garam masala and cook, stirring, for 1-2 minutes.
Stir in the tomato paste for a minute before adding the passata, chicken stock, salt and sugar. Stir well and bring to the boil, then reduce the heat and simmer for 12 minutes.
Allow to cool a little before carefully pureeing the sauce until smooth and silky, in a blender or using a stick blender. Add a tablespoon or two of water or stock to blend. Return the sauce to the same pan and add the chicken and remaining garam masala. Cook for 4-5 minutes to warm through (add a little stock if you like a slightly thinner sauce).
Meanwhile prepare the Tasty Grains according to the packet instructions and fluff with a fork.
Slowly pour and stir the cream through the sauce and heat through for a minute or two.
Scatter the curry with coriander and flaked almonds (if using) and serve with Tasty Grains and lemon/lime wedges for squeezing.

- 60g unsalted butter

- 1-2 tsp Kashmiri chilli powder (or a hotter chilli powder if you like things spicy)
- 2 tsp garam masala
- 2 tbsp tomato puree

- ½ - 1 tsp sugar, according to taste
- 250-300g leftover shredded chicken/turkey
- 125ml double cream
- 2 x packets of Ainsley Indian-inspired Tasty Grains, to serve
- 1 tbsp chopped fresh coriander
- Flaked almonds, to serve (optional)
- Lemon or lime wedges, to serve
