Crispy Jerk Pork Belly Bites with Jerk BBQ Sauce
These crispy, sticky and jerk-spiced pork belly bites are fantastic for a sharing treat (great served with a rum punch or ginger beer) or equally tasty served as a main course with Ainsley rice and slaw. Easy to make in the air-fryer, but you can also cook in the oven on a lined baking tray at 180C for 40-45 minutes, turning once.
Method
Put the jerk paste (reserving 1 tbsp for the dip), oil and brown sugar in a large bowl and mix together. Add the pork belly and toss to coat well. Leave to marinate if you have the time.
Put the pork belly pieces in a single layer in the basket of your air fryer. Air fry at 200C for 16-18 minutes, turning a couple of times, until crispy and cooked through. You may need to cook in batches depending on the size of your air fryer and timings will depend on the size of your bites and your air fryer – preheat your air fryer if necessary and start with the shortest cooking time.
Meanwhile, heat the sauce ingredients in a small saucepan over a medium heat and bring to the boil. Stir well until smooth then remove from the heat. Season and adjust for sweetness.
Serve the pork belly bites on a platter, scattered with the spring onion and with the dipping sauce on the side. Alternatively serve in a bowl with Ainsley Caribbean Creations rice and slaw for a tasty main course.

- For the Pork Belly
- 500g pork belly (slices are easier), cut into approx. 2.5cm cubes
- 1 x sachet of Ainsley Ultimate Jamaican Jerk Paste*
- 1 tbsp oil
- 1 tbsp brown sugar
- For the Jerk BBQ Sauce
- 1 tbsp Ainsley Ultimate Jamaican Jerk paste
- 2-3 tbsp your favourite BBQ sauce
- 2cm of fresh root ginger, peeled, grated
- 1 tbsp maple syrup or honey, more if needed
- To Serve
- 1-2 spring onions, thinly sliced
