Jerk Turkey Roti with Mango Slaw and Hot Pepper Mayo
A fresh and tasty way to use up your leftover turkey and a spicy alternative to the usual turkey sandwich. Perfect for a ‘twixtmas’ light lunch. We’re using shop bought roti or flat bread for ease.
Method
Put the shredded turkey in a bowl and add a drizzle of oil and the jerk seasoning. Toss to coat. Leave to marinate while you make the slaw.
Put the cabbages, spring onion, mango, chilli and coriander into a large bowl. Mix together the orange juice and honey and add lime juice to taste. Season and then drizzle over the slaw. Toss to coat.
Heat a frying pan over a medium heat and add the turkey. Cook to heat through in the spices.
Meanwhile mix together the mayonnaise and lime juice and add hot pepper sauce to taste.
To serve, place a roti or wrap on a serving plate. Top with jerk turkey and slaw. Drizzle with hot pepper mayo and garnish with coriander. Wrap up and enjoy.

- 300g leftover turkey, shredded, shredded or thinly sliced
- ½ sachet of Ainsley BBQ Jerk Seasoning
- 4-6 large roti or tortilla wraps
- For the Mango Slaw
- 150g purple cabbage, thinly sliced
- 150g white cabbage, thinly sliced
- 1 spring onion, thinly sliced
- 1 firm mango, thinly sliced
- 1 red chilli, deseeded and sliced (optional)
- small handful of coriander, chopped, plus extra to serve
- juice of ½ orange
- 1 tbsp honey
- ½ lime, for squeezing
- salt & freshly ground black pepper
- For the Hot Pepper Mayo
- 3-4 tbsp mayonnaise or plain yoghurt
- juice of ½ lime
- dash of hot pepper sauce
