Spiced Couscous & Lentils

This is such an easy and tasty dish to make with just a few ingredients. Inspired by a popular middle eastern rice and lentil recipe, we’ve swapped rice for our flavour packed Spice Sensation Couscous – it’s delicious and great as a side dish to grilled meats, fish or veg or as a main meal topped with a fried egg.

Method

Prepare the couscous according to the packet instructions.

Meanwhile, heat the oil in a large frying pan over a medium heat. Cook the onions for 6-8 minutes until golden. Add the garlic and cook for 30 seconds. Move the onions to one side of the pan and add the cumin to the other. Toast for 30-60 seconds until fragrant. Stir through and add the lentils, cooking for a few minutes to heat through. Season with salt and pepper. Add the couscous and half the coriander and toss through.

Serve immediately scattered with crispy fried onions, chilli flakes and the remaining coriander. Top with a dollop of yoghurt.

  • 1 x packet of Ainsley Spice Sensation Couscous
  • 1 tbsp olive oil
  • 1 small onion, thinly sliced
  • 1 clove of garlic, minced
  • 1 tsp cumin seeds, lightly crushed
  • 200g pre-cooked brown or green lentils
  • 2 tbsp chopped coriander
  • 2 tbsp shop bought crispy fried onions (optional)
  • chilli flakes or pul biber, to garnish (optional)
  • (plant-based) yoghurt, to serve
