Tasty Grains & Chipotle Chicken Burrito

An easy and delicious lunch idea using our Ainsley Mexican-inspired Tasty Grains*.

Method

Mix together the chipotle paste, oil, honey and lime juice and add to the bowl and season with salt and pepper. Toss to coat the chicken. Cover and set aside to marinate for 20 minutes or chill to marinate for longer.

Lightly oil or line the air-fryer (use a crisping plate if you have one). Place the chicken in a single layer and air fry at 190C for 14-16 minutes or until cooked through – timings will depend on the size of your chicken thighs. Alternatively cook in the oven or in a chargrill pan.

Meanwhile prepare the Tasty Grains according to the packet instructions and fluff with a fork.

Mix together the tomatoes, spring onion and coriander. Add a small squeeze of lime juice and season with a little salt.

Smash the avocado and mix in the lime zest and a squeeze of the lime juice. Season with a little salt & pepper.

Warm the tortilla according to the packet instructions in a hot pan or microwave.

Divide the Tasty Grains between the tortillas – placing them along the middle of the wrap. Add a spoonful of the tomato and then top with the sliced chicken, cheese and some avocado. Be generous but avoid over-filling. Fold in the left and right sides of the tortilla over the filling, fold up the bottom and tuck it over and under the filling. Roll the burrito away from you keeping the sides tucked in until the filling is enclosed. Slice in half and enjoy (or seal and crisp in a dry hot pan for a couple of minutes on each side).

  • 4 large chicken thighs, flattened out

  • handful of cherry tomatoes or 2 vine tomatoes, chopped
  • 1-2 spring onions, trimmed and sliced
  • handful of coriander leaves
  • ½ lime juice & zest
  • 1 avocado, stoned, peeled
  • 3-4 large flour tortilla
  • 80-100g cheddar cheese, grated
