Zesty Hot-Honey Chicken Thighs with Couscous & Feta
Hot honey is so popular at the moment and it’s easy to make your own with hot sauce or chillies. We’ve added some fresh citrus for a little zing and the sweet, spicy and zesty glaze works perfectly with chicken. This is an easy recipe that’s great for a midweek meal and our Tomato & Chilli Couscous is the perfect accompaniment.
Method
In a large bowl whisk together the honey, hot sauce, juice & zest and garlic. Spoon half the marinade into a small saucepan and set aside.
Add the oil and chicken to the marinade in the bowl and toss to coat. Season well with salt and pepper. Cover and chill in the fridge for at least 1 hour.
Preheat the air fryer.
Lightly oil or line the air-fryer (use a crisping plate if you have one). Place the chicken thighs skin-side down in a single layer – you may need to cook in batches. Air fry at 180c for 10 minutes and then turn skin-side up and air fry for a further 10-15 minutes or until cooked through and crispy.
Meanwhile prepare the couscous according to the packet instructions.
Heat the marinade in the saucepan over a medium heat (add any of the cooking juices from the chicken if you like). Bring just to the boil and then remove from the heat. Whisk in the butter.
Toss half the feta and the parsley through the couscous. When the chicken is cooked, drizzle over the hot honey glaze. Serve on a bed of the couscous, garnished with the parsley and remaining feta.
