Easy Lunch Burrito Wrap With Mexican Grains
A tasty burrito-inspired wrap that’s easy to make with our Mexican flavoured grains. We’re using shop bought refried beans for ease, but feel free to make your own. This is a great way to use up leftover chicken or swap for roasted vegetables for a veggie lunch.
Method
Prepare the grains according to the packet instructions and fluff with a fork.
In a bowl mix together the tomato, spring onion, jalapeno, coriander and lime juice. Season with a little salt (and a pinch of sugar if you like).
Heat the refried beans and tortilla according to the packet instructions.
Mix together the sour cream and lime zest and add hot sauce to taste.
To serve, spread some refried beans onto a tortilla. Top with lettuce, Tasty Grains, chicken, avocado slices and a good spoonful of the tomato salsa. Scatter with cheese, add some sour cream. Wrap up the burrito and enjoy as it is or pan fry for 2 minutes per side until crispy and the cheese has melted.

Ingredients
- 1 x packet of Ainsley Mexican-inspired Tasty Grains*
- 2 tomatoes, deseeded and chopped
- 1-2 spring onions, sliced
- 1 fresh jalapeno, finely chopped (or jalapenos from a jar)
- Handful of coriander leaves, chopped
- ½ lime, juice & zest
- 1 x 200g tin/pouch of refried beans
- 300-400g leftover rotisserie or roast chicken, shredded
- 1 little gem lettuce, shredded
- 1 avocado, peeled, destoned and sliced (optional)
- 60g grated Cheddar
- 4 tbsp sour cream or Greek yoghurt
- 2 tsp Mexican hot sauce (more if you like it spicy)
- 4 regular/large flour tortilla, warmed
