
Roast Pork with Roasted Squash & Onion Couscous
More of a suggestion than a full recipe this is a tasty couscous side to serve with roast pork.
Method
Preheat the oven to 200C/180Cfan
Place the squash and onion on a baking tray and sprinkle over the cumin. Season with salt and pepper and drizzle with oil. Toss to coat well. Roast for 20-25 minutes or until softened and lightly charred on the edges.
Meanwhile prepare the couscous according to the packet instructions. Fluff with a fork.
Toss the vegetables and parsley through the couscous and serve with slices of roast pork.
(Easy Roast Pork Loin – pat the skin dry and score. Lightly oil the skin and season generously with salt and pepper. Roast in a hot 220Cfan oven for 15-20 minutes and then reduce the temperature to 180C/160Cfan. Roast for 25-30 minutes per 450g according to the weight of your joint or until cooked through and the juices run clear. Rest before slicing).

- 1 x packet of Ainsley Roasted Vegetable Couscous
- 1 tbsp chopped parsley
