
Fried Halloumi, Couscous Salad & Tzatziki Wraps
Wraps are great to make for a quick and tasty lunch and adding our flavoured couscous to the filling makes for a tasty and satisfying bite. We’re using a shop bought tzatziki for a quick and easy wrap, but feel free to make your own from Greek yoghurt, grated cucumber and a little garlic.
Method
Prepare the couscous according to the packet instructions. Set aside
Heat a non-stick frying pan or griddle over a medium-high heat. Slice the halloumi into 1 cm thick strips and brush/drizzle with olive oil. Sprinkle over the chilli flakes and oregano. Fry the halloumi slices for a minute on each side. Drizzle with honey and cook for a minute longer.
Meanwhile warm the tortilla according to the packet instructions.
Fluff the couscous and stir in the olives, tomatoes and onion.
Spoon some tzatziki down the middle of the warmed tortilla, top with the couscous salad and the grilled halloumi. Drizzle with any honey from the pan and roll up the tortilla.
Ingredients
- 1 x packet of Ainsley Sun-dried Tomato & Garlic Couscous
- 1 x block of halloumi
- olive oil, for brushing/drizzling
- ½-1 tsp dried oregano
- ¾ tsp chilli flakes
- 2-3 tbsp runny honey
- handful of pitted black olives, roughly chopped
- handful of cherry tomatoes, halved or quartered
- wedge of red onion, thinly sliced
- 4 medium soft wheat or corn tortilla
- shop-bought tzatziki
- sea salt & freshly ground black pepper
